So, hard boiled eggs are great. I like to make a ton of them, peel them and leave them in a tupperware in the fridge. Then, I just pluck one out, sprinkle on some Old Bay, eat it and repeat as necessary.
Well, I love it all except for the peeling part. Peeling hard boiled eggs sucks.
At least, it did until our friend science showed up. Science loves to party.

As an added bonus, here’s my emergency egg salad recipe, containing only things I am likely to have in my fridge a full week after grocery shopping.
4 peeled, diced hard boiled eggs (Just pucker up and blow)
1/8 cup light mayonnaise (Make it yourself if you’re feeling ambitious)
1/8 cup dijon mustard (Trader Joe’s actually has a great dijon)
1½ teaspoons vinegar (I like using rice wine vinegar, but pick your poison)
2 teaspoons minced onion (I always seem to have onions left over)
Salt and pepper to taste (Buy a box of Morton’s kosher salt, it’s great)
Feel free to add diced celery, bell peppers, ground cayenne pepper, hot sauce, garlic powder, green onions or anything else you might have laying around. Replace the vinegar with a lemon if you have one… the key, of course, is eating it right out of the bowl or maybe with some toast you made from that bread in your freezer. Above all, no leaving the house for supplies.
michael, if you need help consuming said eggs, i think we should have some sort of bake-off/sale. you will probably nix this idea, and i will probably make brownies anyway.

Nicole, those all sound delicious, but a smoothie cupcake, i feel like this is a whole new territory. is this a cupcake we can drink or is this smoothie used in place of whatever liquids are needed?

As far as the steak off, make sure you both get the same cut and quality of meats… no fair putting a prime dry-aged ribeye up against some stepped-on Safeway top round.
Baking? Not my forte, but it sounds like you know your way around a muffin tin, Nicole.

July 8, 2008 at 4:42 pmAmanda - you actually use a smoothie mix you make in a blender in place of the liquids and it was surprisingly easy to make/bake with. I’m moving into the brownie realm and cheesecakes as well.

also, in reference to egg salad. i cannot eat things that i can’t stand smelling and egg salad is one of those things. and potato salad. i’ve just recently come around to chicken salad, and that has to have fruit in it for me to like it.

Horseradish (either the creamy style or the real stuff, but the real stuff is better) is also good. Just a smidge.
I have about 5 dozen eggs left over from a brunch where 5 dozen were already consumed. I just don’t have enough tupperware. In fact I don’t think I have any.
