Short on cash, but not on appetite? I’ve been throwing together some pretty tasty meals at home that are easy, satisfying and cheap to make. I figure there’s no harm in sharing some of what happens in my kitchen, maybe it’ll help out in yours.

Now this is a recipe for twice-baked potatoes, something I'd actually never made before. But the thing about living frugal is that you just have to take what is given to you and make it delicious. In this case, some baked potatoes that my dear father sent me home with after a delicious steak dinner. So, without further ado...

  • Step 1: Cut baked potatoes in half and scoop out the inside with a spoon. Please them in a shallow baking dish.
  • Step 2: Mash the insides up in a bowl with a little milk and butter.

  • Step 2: Got some veggies? I had frozen broccoli, so I thawed a package and chopped it up. Do the same with whatever you have around. Broccoli, peppers? Even some cooked ground beef, some ham, whatever.

  • Step 3: Mix your chopped stuff with the mashed stuff. Add some cheese. I used a mix of mozzarella, cheddar and Parmesan because that's what I had. Little salt and pepper would be good too.

  • Step 4: Fill up those potato shells. They will be overflowing, it's cool. Top it with breadcrumbs or a good cheese like Parmesan.

Step 5: Bake at 400 degrees for about an hour. Use common sense here, if it looks ready earlier, take it out.

Step 6: Plate it, top with sour cream or Greek yogurt if you want. A little salad on the side and you have a nice meal. Enjoy!

Heya. I tried this out last night and it turned out wonderfully. Thanks for the simple but delicious fix!

I garnished mine with: BACON, broccoli, finely diced garlic, chevre, feta, cheddar, milk, salt, and pepper. However I neglected "Pleas[ing] them in a shallow baking dish," so they may or may not have been even better with a gamete accent.

i like that so far, the "Broke Food" column always includes stuffing something into something else.

with that in mind, i'd like to see a recipe for lobster stuffed with tacos. altho i guess that wouldn't really qualify as broke food.
