This cocktail uses the Orange Curacao featured yesterday to bring it all home. I like this because it’s simple, uses an egg white for foam, and tastes a lot like orange Triaminic (a complex, nuanced flavor that as a child I loved more than anything).

As I mentioned before for the Rattlesnake, raw egg whites are used to create foam. “When shaking things with egg whites, shake hard! Put all the ingredients in the shaker except the ice, and shake thoroughly to emulsify. Add the ice and shake thoroughly again.”
Yes & No Cocktail
- 2 oz brandy
- 1/2 oz orange curacao
- 1 egg white
- dash nutmeg on top
Shake in iced cocktail shaker and strain. Serve in a cocktail glass.

You can use egg whites that come in a carton, but because this is an amalgamation of (literally) dozens of egg whites your chance of getting salmonella is higher.
If you’re lazy (or don’t want to keep eggs on hand), powdered egg whites are your best bet. They are easy to reconstitute using water, some brands are flash pasteurized and guaranteed to be salmonella-free, and they’ll retain their consistency in the drink. ALWAYS use water when using powdered egg white, NEVER try to rehydrate it with alcohol or it’ll turn into a disgusting, gloppy mess.
*Powdered egg whites and meringue powder are not interchangeable so be sure you’re buying powdered egg whites!
