Let's do something a little different. Let's use raw egg whites!

Rattlesnake
- 3/4 oz lemon juice
- 1 egg white
- 1 barspoon powdered sugar
- 1/4 oz sugar syrup
- 1 1/2 oz Bourbon
Shake well over ice cubes in a shaker, strain into a cocktail glass. When shaking things with egg whites, shake hard! Put all the ingredients in the shaker except the ice, and shake thoroughly to emulsify. Add the ice and shake thoroughly again. The whole point of using egg whites is to add a layer of foam that gives the drink a nice, smooth texture and mellows the strength of the alcohol. Try to use organic, free-range egg whites. I know there's a lot of controversy over organic vs. not organic, antibiotics vs. not overusing them, etc. Point is, you're drinking a raw egg white. I personally wouldn't use anything but the freshest thing I could find. I've gotten sick so many times from raw eggs (yet I still keep eating raw cookie dough).
