Dear weather gods, what gives? I realize rain is necessary and in fact vital to human existence. But really? Can we have some sun please?
Cue one of Weezer’s cheesier moments and break out the sunscreen for tomorrow.
Island In The Sun
- 1 oz Galliano
- 2 oz pineapple juice
- 1/2 oz rum
- 1/2 oz apricot brandy
- 1/2 oz fresh lemon juice
Shake in a cocktail shaker with ice and strain into a tall glass filled with ice. Add cherry and orange slice and a sprinkle of sugar if you like. The color is a little too brown-ish for summertime but the flavor is pure “Princess Cruise Ship with Limbo Stick” – all style, no substance and reeks like a gas leak. What’s interesting to note is how the apricot brandy pairs well with the Galliano – who knew? The pineapple juice adds a nice finish. The rum I could give or take; I suggest using a lighter rum made with sugar cane, not molasses.
