I had this recently at Gibson and loved it. It's smooth and a little sweet, with the grapefruit juice's acidity nicely cutting the bourbon and honey.

Brown Derby
- 2 oz bourbon
- 1 oz grapefruit juice
- 1/2 oz honey
Shake well with ice and strain into a chilled cocktail glass. From past experience I will comment thusly: measuring honey is kind of a bitch. This drink is delicious, but I loathe doing anything with honey (cute bear be damned) because it's so sticky and so much working getting every drop into the shaker. I recommend putting the honey and ice in last; nothing sucks more than trying to shake with honey-covered ice cubes (they won't melt, the honey won't mix, and it's just gross).
