There are several variations of the “Aviation” cocktail. I’m going to give you two of them, one being easy to make, and the other requiring some more obscure ingredients.
Aviation (Schumann’s)
- 3/4 oz lemon juice
- 1 barspoon superfine sugar
- dashes maraschino liqueur
- 1 1/4 oz gin
Shake over ice in a shaker, strain into a chilled cocktail glass and serve.
The next variation includes Crème de Violette.
Aviation Cocktail No. 1
- 2 oz gin
- 1/2 oz freshly squeezed lemon juice
- 2 tsp. maraschino liqueur
- 1/4 oz Crème de Violette
Combine the first three ingredients in a shaker with ice and shake well. Strain into a chilled cocktail glass and drizzle with the Crème de Violette. Garnish with a lemon twist.
Both of these are lovely gin drinks. Keep in mind that the first variation is going to be rather tart. This cocktail also depends a lot on the gin you use, it relies heavy on the botanical flavors. Generally today, if you order an Aviation at a bar, it will be closer to the first one and might not have Crème de Violette.
